Monday was "Make it Monday" on my blog.
Tuesday shall be "Taste it Tuesday".
Old Man Winter is BACK!
The temperature is dropping as I type.
The weather forecaster predicts 3-7 inches of the white stuff.
Time for another soup recipe:
Low in calories
High in yumminess!
Ingredients:
(short and sweet)
-2 bags of California Mixed Frozen Vegetable Mix
-8 oz of reduce calorie Velveeta Cheese.
-1 can of Rotel Tomatoes (spicy it up here)
-3 cans of low fat chicken broth Directions:
Combine all ingredients except for the cheese.
Simmer until vegetables are cooked.
Add cheese. Stir well until melted.
One of my favorite recipes is a Black Bean and Corn Salsa:
HEALTHY with a capital "H"!
Also, DELICIOUS with a capital "D"!
Here's how:
Chop and mix any or all these ingredients:
-1 can black beans (rinse and drained)
-1 can whole kernal corn (drained)
-red pepper and yellow pepper
-red onion
-celery
-salsa (spicy baby)
-a dash ground cumin
-garlic minced
-lemon juice
-salt
Refrigerate, covered, until chilled....
Excellent on a whole wheat torttillas, as a salad topper, on a baked potato.
